Copy Live to Staging, database only

For custom WP development, you have one of the best live/staging environments out there. So thank you!
However, when I have git repos set up on the staging server, but then need to bring over data from the live server, I only want to copy the database, not the file structure. Plugins may be different, repos may be different, etc. Being required to copy the whole instance overwrites my git repos, which may or may not be committed or pushed yet.

If GP could remember the options (which tables) from the last "Copy Live to Staging", that'd be great too, but not critical.
